Hello!
A lot of things have been going on at our house so far in the month of January! I officially made it into the 100 Club and for those of you who have ever struggled with weight know exactly what I mean. I am now a size 12 with hopes of becoming a 10 but if I don’t that’s ok. I was once a size 16 and to be a 12 at the age of 40 is a huge accomplishment.
My husband and I are starting a Non Profit Organization. It is a Ministry for helping out Widows and Orphans along with fighting corruption. (James 1:27) Being foster parents we saw a huge need for the Foster kids as well as countless Orphanages that we help out. GOD put it on our hearts to start this Ministry. Please pray for us. The name of the Ministry is Joshua’s Blessing.
Our oldest son is a senior in High School and is finishing his last semester of school as well as attending a few Church activities. Powder burn is a conference in the Mountains and is for a weekend, and then this summer he will be attending CHIC 2012! He is actively fundraising and looking forward to this huge event in Tennessee.
Our daughter is in another state helping out a family until June and is also helping out a non-profit organization. He is an accomplished writer and has been published twice this year. We are very proud of her and her walk with the Lord!
As you can tell I barely have time to think let alone write a blog, I am sorry but it is true. Thanks for your patience.

Happy New Year!
Wow 2011 was a fun filled crazy year for our family. GOD has blessed us beyond measure and we are trying to be a blessing to all we encounter. As you can tell I am HORRIBLE at keeping up my blog. The truth is the blog is not a priority in my life. Being a Christ following, stay at home mom and home schooling my children along with trying to be a blessing to my husband my website, Facebook, and twitter come last as in once in a blue moon. I am trying to figure out how I can better serve my followers and I am looking at my schedule and praying about the time commitment involved. I am currently feeling maybe every two weeks would be a possibility but only time can tell.
2011 has brought some changes to our family our sweet daughter moved to Massachusetts. Our son is a senior in High School, and our baby boy is potty trained! The last was the hardest for us. He regressed when we had his baby sister here for a few months (foster parents remember?) He is now trained and in big boy undies! I highly recommend the 3-day potty training method. It is an eBook you download for 24$ you can get it here . I am not affiliated with them in any way nor do I receive money from them. I am simply a mom who loves this approach enough to bring it to your attention. Some more news from our homestead is we now have a new puppy. His name is Monty and is half collie half Golden Retriever. I do not understand how it is possible none of us are allergic to this dog, but we spent 5 hours at the rescue with the puppy and no reaction. We are so blessed to have a dog again. :O)
Some goals for 2012are: to continue to loose weight, Our family now follow the Paleo lifestyle and I have lost two dress sizes so far and feel better than I have ever felt in my entire life. Another goal is to continue to focus on helping our the widows and orphans in our community as well as in two orphanages we sponsor, one in Mexico and one is Africa. We really want to be a blessing to others wherever GOD leads us. I also want to be better as a MOPS leader and friend. As an introvert it is really easy for me to want and stay at my home all the time.
I wish you well and great blessings, this New Year and NO I don't believe the end of the world, as we know it is this year. The bible is clear NO ONE knows the day or time.

1 large pkg White Chocolate Chips
1 pkg Milk Chocolate Chips (or Semi-Sweet)
1 C Creamy Peanut Butter
Spray a 9x13 pan with cooking spray and set aside.
Place peanut butter and vanilla bark (white candy coating) in microwave until melted, stir to combine. Melt chocolate chips in microwave, while chocolate chips are melting, pour the peanut butter mixture into the 9x13 pan. Make dollups of melted milk chocolate all over the pan, take a knife and drag through the peanut butter mixture to marble it. Place in fridge until set, cut into pieces and enjoy. I HAVE TO MAKE THIS EVERY CHRISTMAS OR ELSE MY FAMILY WOULD REBEL!!!!

1 Tablespoon Vegetable Oil
1 LB Chicken Breast fillets (Approx 3 fillets)
½ C diced Onion
1 clove Garlic, pressed
4 C Chicken Broth
1 C Masa Harina
3 C Water
1 C Red Enchilada Sauce
16 oz. Velveeta Cheese
1 Teaspoon Salt
1 Teaspoon Chili Powder
½ Teaspoon Cumin
Garnish
Shredded Cheddar Cheese
Crumbled Corn Tortilla Chips
Instructions:
Add 1 Tablespoon of oil into a large pot over medium heat, add chicken breasts to pot and brown for 4-5 minutes per side. Set chicken aside. Add onions and garlic to pot and sauté over medium heat for about 2 minutes, or until onions begin to become translucent, add chicken broth. In a separate bowl combine Masa Harina with 2 cups of water and whisk until blended, now add the masa mixture to the pot with the onions, garlic and broth. Add remaining water, enchilada sauce, cheese and spices to the pot and bring mixture to a boil. Shred the chicken into small, bite-size pieces and add it to the pot. Reduce heat and simmer soup for 30-40 minutes or until thick.

Ingredients
- ½ cups Butter
- 1 cup Asiago Cheese, Shredded
- ½ cups Pepperoni Slices, Cut Into Small Pieces
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 2 cloves Garlic
- 1 package (8 Oz. Size) Buttermilk Biscuits, Cut Into 1-inch Cubes
- 1 cup Marinara Sauce Or Pizza Sauce, For Dipping
Preparation Instructions
Spray 6 small bundt pans with PAM or cooking spray. (You could also use a large bundt pan.)
Melt the butter in a small bowl.
Combine the cheese, pepperoni, oregano, salt and garlic in a large bowl. Add the melted butter and mix together with a spoon. Toss in the cut dough and make sure it all gets a coat of the butter mixture. Start layering the cubes into the bundt pans until they are 3/4 full.
Let sit for 30 minutes for the dough to rise a little more.
Place bundt pans into the oven and bake at 400ºF for 25-30 minutes until the bread and cheese is golden brown.
Serve with warmed marinara sauce or pizza sauce.
