Bacon Mac and Cheese Panini

Ingredients:

  • 2 slices ciabatta bread
  • 1-1/2 tablespoons butter
  • About 1/3 cup cheddar mac and cheese
  • 1 slice provolone cheese
  • 2 pieces bacon

Directions: 

  1. Preheat a griddler or panini press.
  2. Butter both slices of bread. Layer the cheese, mac and cheese and bacon on 1 bread slice. Top with the second piece of bread and slightly push them together.
  3. Place sandwich on the grill press and press it down. Cook the sandwich until both sides are golden brown and cheese is melted.

** Tip from Chella If you don't have a panini press you can use the skillet method just place a heavy skillet on top. Or use the tip below and weigh down the cookie sheet.

Prepare your grilled cheese sandwiches as usual (buttered on both sides) Put sandwiches between two baking sheets. Bake 350° for 15-20 minutes.
